This is definitely in the “comfort food” category. Not that I need any comforting, I just wanted something yummy and buttery for supper. This little Amber Wright Original did just the trick!
Garlic, butter & brown sugar noodles
Ingredients:
5 tbs butter
half of white onion, sliced thin
4 garlic cloves
half a cup of green onions
2 boneless, skinless chicken breasts, sliced 1/2 inch thick pieces
1lb thin spaghetti, or the noodle of your choice! Linguine would work well with this, too!
3 tbs brown sugar
4 tbs soy sauce, plus more for later
Method:
First you’re going to melt 4 tbs butter in a non-stick pan. Throw your white onion and garlic in, saute for about 3 minutes, then throw your sliced chicken breast in the pan and cook in the butter until chicken is done. Add the other 1 tbs of butter somewhere along the way when the butter starts to look like it’s disappearing. While you got the chicken going, cook the noodles according to the package directions.
When the chicken is done, turn the heat down low until most of the butter reduces. Keep on low heat until the noodles are done. When the noodles are finished, add the brown sugar, soy sauce and 1/4 cup of green onions to the chicken. Mix well enough to make sure the brown sugar is dissolved.
Add the noodles and toss until well coated. Place noodles in a serving bowl and top with remaining green onions. I also like to sprinkle some brown sugar and top with more soy sauce. My husband put sriracha sauce on his, which I thought was weird, but whatever floats your boat! Enjoy!
