In case you weren’t aware, today is the last day of July. Which means August is here.
I am returning after a half semester break, which puts me a half of a semester behind, meaning I won’t graduate until December 2013 now. No big deal since I’ll just be going right back for my Masters. Anyway, I’m pretty worried about the upcoming semester. Miles is much busier than he was the last time I took classes. It is definitely going to be challenging to get through these next 2.5 semesters, but many moms before me have done it, and by golly, I’m going to do it, too! I didn’t get this far just to throw in the towel and make excuses. Okay, now I’m quite excited! I received a few of my text books in the mail today. I am taking a marriage counseling and a child development class, and I am so excited for both of them. Not only because they pertain directly to my career, but also becauseI have a husband and a child and I’m getting a professional education in how to take care of both of them! I mean, I know that experience and time are probably the best teachers, but a few senior level college classes can only help, right?
In other news, my blog-iversary is fast-approaching and I have no idea how I want to celebrate! Last year, I celebrated with tilapia over cilantro-lim rice for a healthy break from my sweets kick. I might craft something instead of making food since my blog-iversary is also the first day of school. Oh, and my husband will be home two days after that! I’m really excited to have our little family back together for a couple of weeks before he leaves again. Partly because we are planning a trip to Matt’s Big Breakfast one day while he is home. I dream about that day…waffles and Sam..mmm.

I can’t believe it’s been a whole year since I got bored enough to begin a blog. It feels good to be celebrating this! I had been contemplating making a yummy cake to celebrate my blog’s birthday, but my blog needs to go on a diet. Too many sweets found in the entries of this thing. So, I decided to go with a much lighter, healthier dish that I sort of came up with by combining 3 (of some) of my favorite recipes: Cucumber-cilantro salsa (from the Mayo Clinic), Lime-buttered Tilapia (from my head), and Cilantro-lime rice (from this guy). It was so yummy, and I have 3 witnesses who will testify to that fact: Roberto, Debbie, and Sarah. Donna saw it, so she can tell you how good it looked. But I will save her the trouble and post a picture.
Tilapia with Cucumber-Cilantro Salsa served over Cilantro-Lime Rice
You can get the recipes for the salsa and the rice from the links I provided. For the tilapia, simply combine 2-3 minced garlic cloves, 3 tablespoons of FRESH lime juice (bottled lime juice tastes like crap), and 3 tablespoons of olive oil. Lay 4 or 5 fillets in a baking dish big enough so they all can lay in there without over-lapping each other. Sprinkle on some salt and pepper and pour about a tablespoon of melted butter over them, then pour the lime juice mixture over the fillets. Bake for about 15 minutes on 425, or until the fish is done (you will know because it will start to flake). Then you can eat it however you want! I chose to lay the rice on bottom, topped with the tilapia, then topped again with the cucumber salsa. Yummy!

I have decided that I am not going to make something sweet and unhealthy for my Blog’s birthday. I have been eating too much bread and sweets lately and I think it’s getting a little out of hand. Instead I am going to combine three of my favorite recipes: lime-butter tilapia, cucumber salsa, and cilantro-lime rice. It’s light and healthy, and I know Debbie will love it, not so sure about Robert, but he’ll eat it!
So I know I made a reading list and promised that I would finish all the books earlier this year, but (insert 3 or 4 really bad excuses as to why I broke my promise to myself)…and with all that stuff going on, I just have not been able to keep up with the reading list so far. I have been reading though! I read The Help by Kathryn Stockett the week before last and then went to see the movie. It was a great book and a very quick read, um, if you’re a quick reader like me. The book got me wondering if I were to have lived back in those times in the South, would I have felt that way about black people? Would I feel like they are second class citizens and need to be separated from the whites? It makes me sick and sad to say that I probably would feel that way. I mean, I am from the southern part of the US, granted Florida is NOT the South. I am pretty conservative in, well, all of my beliefs, and I am a Christian. Those seem to be the people who felt the strongest about segregation. I hope that I would have been able to see past their misguided views and love everyone equally, as Christ did and wants us to.
