I can’t believe it’s been a whole year since I got bored enough to begin a blog.  It feels good to be celebrating this! I had been contemplating making a yummy cake to celebrate my blog’s birthday, but my blog needs to go on a diet.  Too many sweets found in the entries of this thing.  So, I decided to go with a much lighter, healthier dish that I sort of came up with by combining 3 (of some) of my favorite recipes:  Cucumber-cilantro salsa (from the Mayo Clinic), Lime-buttered Tilapia (from my head), and Cilantro-lime rice (from this guy).  It was so yummy, and I have 3 witnesses who will testify to that fact: Roberto, Debbie, and Sarah.  Donna saw it, so she can tell you how good it looked.  But I will save her the trouble and post a picture.

Tilapia with Cucumber-Cilantro Salsa served over Cilantro-Lime Rice

You can get the recipes for the salsa and the rice from the links I provided.  For the tilapia, simply combine 2-3 minced garlic cloves, 3 tablespoons of FRESH lime juice (bottled lime juice tastes like crap), and 3 tablespoons of olive oil.  Lay 4 or 5 fillets in a baking dish big enough so they all can lay in there without over-lapping each other. Sprinkle on some salt and pepper and pour about a tablespoon of melted butter over them, then pour the lime juice mixture over the fillets.  Bake for about 15 minutes on 425, or until the fish is done (you will know because it will start to flake).  Then you can eat it however you want! I chose to lay the rice on bottom, topped with the tilapia, then topped again with the cucumber salsa.  Yummy!
